In your mouth, there are several areas that pick up different sensations: the tip of your tongue will pick up sweetness or saltiness, the sides of the tongue will pick up acidity, and the very back of your tongue will pick up bitterness. The ways to describe wine’s aromas and flavor profile include floral (start there and try to think of what kind of flower), earthy, leathery, coffee, tea, fruits like citrus (grapefruit, orange or lemon), apple, strawberry, cherry or blueberry … the list goes on and on. You could even find smells you weren’t expecting, like animal, smoke, or even tar. The possibilities are endless, but easier to describe if you have an excellent vocabulary of smells.
